Chicken Parmesan

Chicken Parmesan also known as chicken parmigiana, is world renowned Italian dish made with breaded chicken breast topped with tomato sauce, mozzarella and parmesan cheese. After trying chicken parmesan at various restaurants I have come up with my own take on the dish. To me, the perfect chicken parmesan is crispy on the outside, tender and juicy on the inside, topped with the perfect amount of tomato sauce and cheese and of course filled with flavor.

Step 1: Prep and Season

Slice chicken breast into halves and pound with a mallet to get an even thickness throughout

Combine your seasonings together

Rub the seasonings onto both sides of the chicken pieces

Step 2: Bread

Pour flour evenly across a flat surface

Lay the chicken on top and press down firmly on both sides

Whisk egg in a large bowl and dip chicken pieces

Pour panko breadcrumbs evenly across a flat surface

Lay the chicken on top and press down firmly on both sides

The chicken is now breaded and ready to be cooked

Step 3: Sear

Heat oil on a cast iron skillet and add chicken once its hot

Sear the chicken until it develops a crispy golden brown coating

Sprinkle parmesan on top while chicken is still hot

Step 4: Assemble

Pour on a thick coat of tomato sauce on top of chicken

Add mozzarella cheese on top of the tomato sauce

Sprinkle on dried basil leaves on top of the cheese

Step 5: Bake

Bake the chicken at 375’F for 25 mins or until the cheese is bubbling and melted

Ingredients

Instructions

  1. Slice your chicken breast into halves and use a mallet to flatten it out evenly
  2. Add salt, pepper, cayenne pepper, and parsley flakes and rub it onto both sides of the chicken
  3. Dip the seasoned chicken into the flour mixture, then the egg mixture and lastly the panko breadcrumbs
  4. Heat 2 tbsp of olive oil to a cast iron skillet on medium high heat
  5. Once the oil is hot sear the chicken on both sides until the chicken turns golden brown and crispy (1-2 mins)
  6. Add parmesan cheese, tomato sauce, mozzarella and dried basil on top of the chicken 
  7. Bake the chicken at 375’F for 25 mins or until the cheese is bubbling and melted
  8. Enjoy 🙂
